Welcome to the Calgary Beet! My name is Carol and this is where I will be sharing recipes that are gluten-free, vegan, sugar-free, soy-free and oil-free. So often when I look for healthy inspiration on other blogs and websites, I find recipes that capture one or two of those elements, but not all. I’m trying to fill that gap. I eat a mostly-raw, vegan diet but I haven’t always eaten that way – read on.
Interest in food
My interest in food began when I first moved away from home and had to cook for myself. I was raised on the Standard American Diet (SAD) characterized by high meat, high dairy and refined carbohydrates, but I have come to believe that the body has an incredible capacity to heal itself and restore health when we feed and nourish it properly. My personal experience supports this belief and consequently changed my whole way of thinking about the food we eat.
I have 6 years professional culinary experience and have been feeding and catering for family and friends for much longer than that. I left the culinary industry to pursue a successful career in the environmental sector but my interest in the link between food and well-being continues to direct my food choices, research and lifestyle.
Philosophy of Food
My philosophy on food is wellness!

I currently support a plant-based diet meeting all of the criteria mentioned above although I’m no purist, nor am I fond of boxes or labels. In 2010, I embraced a 100% raw diet and had success for approximately 2 years. By the time I reached my second winter on the raw diet, I began to miss hot food and eventually succumbed to my cravings. It never bothered me to eat only raw fruits and vegetables during the day, but dinners began to include the occasional cooked meal, and even meat. At the time, I didn’t delve into the reasons behind my craving for hot food. I put it down to the fact that it was winter (I live in Calgary, Alberta, Canada), and it was possible that my body just needed something warm. I am curious though so it’s a subject I would like to explore later.
I still believe in the philosophy behind the raw lifestyle and personally experienced weight loss, a higher level of mental and physical energy, and overall improved wellness while eating all raw. Most people explore the raw diet to cure or minimize the effects of disease or illness and often only as a last resort after conventional remedies have failed. Not so for me. At the time I adopted the 100% raw diet I had no physical ailments that I was trying to cure, nor did I feel unwell. But the improvement to my overall wellness was noticeable in spite of that. Truthfully, I really enjoy raw food and I feel best when I eat an all-raw diet. The transition to the plant-based vegan diet is proving to be a bigger evolutionary journey for me, but it is a path I am happily on.
